Let me tell you, this is the easiest recipe for chicken and it is so delicious!
2 tsp. dried parsley, divided evenly
2 tsp. dried basil, divided evenly
2 boneless, skinless chicken breasts
2 cloves garlic thinly sliced
1/4 tsp salt
1/2 tsp crushed red pepper flakes
2 slices of tomatoes (optional) I have tried this both with the tomatoes and with out. It is really good both ways. I like it without the tomatoes because it makes the cheese a little more crisp.
Shredded mozzarella cheese
1. Preheat oven to 350 degrees F. Coat a 9*13 pan with cooking spray.
2. sprinkle 1 tsp. parsley and 1 tsp. basil evenly over the bottom of the baking dish. Place chicken in the dish. Coat with garlic clove slices. Combine the remaining basil and parsley, crushed red pepper and salt. Cover the chicken with mixture. Top with tomato slices.
3. Bake covered for 20 minutes. Remove cover, add cheese and cook for another 20 minutes or until chicken is cooked all the way through.
