Sante Fe Cheese Soup in Slow Cooker

After the weather turned cold here, the most reasonable thing to do was soups for dinner! I love my slow cooker. It is so easy to make delicious meals. If you don't have one of these things, it is definitaly worth the investment.
Sante Fe Cheese Soup
1 pound Velveeta Cheese, cubed
1 pound Ground Beef, browned and drained
1 can (15 1/4 ounces) Whole Kernal corn, with liquid
1 can (15 ounces) kidney beans, with liquid
1 can (14 1/2 ounces) diced tomatoes with green chilies, with liquid
1 can (14 1/2 ounces) stewed tomatoes, diced, with liquid
1 envelope taco seasoning mix
Combine all ingredients in a greased slow cooker. Cover and cook in high heat 3 hours or on low heat 4-5 hours. Makes 6-8 servings. Serve with Fritos. Delicious!

What I have been doing

We are moved in to our new place and have gotten pretty settled. We love it here! Houston's sister had her baby, so she is on maternity leave. That means I am not watching her kids right now and that gives me a lot more free time. This blanket is one of the things that I made for her, and I am attempting to quilt.

As a side note, Emmory has officially started her terrible two tantrums a little early. This is a picture I took when she was having one when I wouldn't let her play in the dog food. Oh the Joy!

Changes are upon Us...

Here we are in the beginning of September and there is so much going on right now, I can't even get my head around it.

We have moved! Yay! I am loving the new place, the open space, the newness of life is great! This last week has been a really hectic one with the move. We have had sick dogs (vet says it was stress from the move). Most importantly, there is a new little bundle of joy, Monroe who was born to Houston's sister on September 1st. She is so beautiful, and we are so excited for her arrival.

Also, I have not formally announced, but Houston and I are expecting another little one on Feb. 1, 2010. We are glad we are going to be settled into the new place in time for little peanut to arrive.

Emmory is getting so big, and unfortunately quickly approaching her terrible two's a little early. She is one little bundle of energy and is as sassy as ever.

I won't make this long, because I know that nobody likes to read long posts, with no pictures, but I am really looking forward to the fall season. The smell of the apple pies, and the leaves changing with the weather. Oh great times! Happy autumn to everyone, hope you enjoyed the summer and will enjoy the rest of this great year!
