What's on your list?



I am sure that most people are making their New Year's Resolution lists right now and usually I am doing the same. Lose weight, be more organized, be more this and less of that. This year I am going to do things a little differently. 2009 was a great year for me, but let's be honest, I cannot even remember what was on my resolution list. I lost that thing by January 12! Don't get me wrong, I love lists, I love setting goals, I always am thinking of new things to accomplish and ways I would like to better my life, but to make some honest changes that will last seems to be more fulfilling than "losing 10 pounds"... (okay, okay..... maybe a little more than 10 pounds, I can't help it! This new baby is addicted to double stuff oreo's and mom's homemade fudge!!!).

I can't remember where I saw this or who it was, but I came across a brilliant idea that I know I can stick to in 2010. Instead of a list, I am going to change one thing. For 2010, I want to focus on kindness. Not just being nice to people, but true honest to goodness kindness...

Kind*ness
is the act or the state of being kind and marked by charitable behaviour, marked by mild disposition, pleasantness, tenderness and concern for others.

I know how to be nice, but I really want to focus outside of myself and really be kind. If you think about it, that is really a hard thing to do. Especially to people you don't really care much for, or to complete strangers. (I know everyone of you have had an episode while driving...) I have one daughter who is already quite the sass and one on the way. I would like to know that they will be taught this quality by their parents.

Anyway, happy New Year! I hope 2010 is the best yet. I know I am looking forward to many great changes in my life, and am excited for everyone of them~

Happy Halloween










I think this is one of the funnest Halloweens I have ever had. Emmory looked so dang cute in her little angel costume. Her halo didn't fit too well, but everything else was so darling! We went Trick-or-Treating with her cousins here in Denver, and they had an absolute blast. Emmory felt like such a big girl holding her candy bucket all by her self, and she couldn't get the the next house fast enough! She would giggle at the candy she received, and be off to the next place to say trick or treat! The weather was great, which was a relief since we got over 2 feet of snow a couple of days prior. It was mostly melted by Saturday, which is typical Colorado. Now we are officially into the Holiday season, so I am sure we will be staying busy, busy, busy! Hope everyone had a great night too!

RECIPE: Pumpkin Seeds

Pumpkin Seeds
1 1/2 Tbsp. Olive Oil
1/2 tsp. salt
1/8 tsp. garlic salt
2 tsp. Worcestershire sauce
Bake for one hour at 275 degrees, stirring occasionally. Check on them as to not burn.



Sweet Pumpkin Seeds


3 Tbsp. Butter melted
1 Tbsp. brown sugar
1/2 tsp. cinnamon
1/8 tsp. salt
1 1/2-2 cups seeds

Mix all ingredients together. Spread out on a baking sheet. Bake at 275 degrees for 10-15 minutes. Take out and sprinkle on 2 Tbsp. sugar. Mix around and bake for another 10-15 minutes. Take out and add another 1 1/2 Tbsp. sugar. Mix around and bake for another 10-15 minutes. Take out and mix around, and bake for another 10-15 minutes. Check as to not burn. It is a lot of work for the hour, but they are really tasty so I find that it is worth it for once a year!!

Where we live in Denver, we received over 2 feet of snow! I am very excited (because I don't have to be driving in it!!) and Emmory just squeals with delight when she plays in it! It is so fun to see her face light up. More pics of her in the snow to follow.

Fall Festival Recipe Exchange


Amy from My Friend Amy is hosting this recipe exchange. There is no better way to celebrate autumn than to get in your kitchen and cook something comforting, and delicious! My recipe is from my mom for Pumpkin Chocolate Chip Cookies. These are really the best!

Pumpkin Chocolate Chip Cookies

1/2 C. shortening

1 1/2 C. sugar

1 egg

1 C. pumpkin (make sure you use just pumpkin, not pumpkin pie filling)

2 1/2 C. flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. vanilla

1 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. salt

1 pkg. chocolate chips.

mix wet ingredients with dry ingredients. Bake at 375 degrees for 10 min. These are so delicious!!!

Car Seat Blanket


Have you heard of this before?! They are so adorable! It is a blanket that you put into the car seat, pull the straps through and snuggle your bundle! It was so easy to make, and quick too. I just made the pattern up so if you are interested, email me and I can tell you the dimensions that I used for this.
*Yes, I realize that all of my posts are about babies and food lately, but that's was happens when you have babies and are pregnant. Bear with me, I am sure there will be an interesting post to come along before too long...

Sante Fe Cheese Soup in Slow Cooker


After the weather turned cold here, the most reasonable thing to do was soups for dinner! I love my slow cooker. It is so easy to make delicious meals. If you don't have one of these things, it is definitaly worth the investment.
Sante Fe Cheese Soup
1 pound Velveeta Cheese, cubed
1 pound Ground Beef, browned and drained
1 can (15 1/4 ounces) Whole Kernal corn, with liquid
1 can (15 ounces) kidney beans, with liquid
1 can (14 1/2 ounces) diced tomatoes with green chilies, with liquid
1 can (14 1/2 ounces) stewed tomatoes, diced, with liquid
1 envelope taco seasoning mix
Combine all ingredients in a greased slow cooker. Cover and cook in high heat 3 hours or on low heat 4-5 hours. Makes 6-8 servings. Serve with Fritos. Delicious!

What I have been doing

We are moved in to our new place and have gotten pretty settled. We love it here! Houston's sister had her baby, so she is on maternity leave. That means I am not watching her kids right now and that gives me a lot more free time. This blanket is one of the things that I made for her, and I am attempting to quilt.








As a side note, Emmory has officially started her terrible two tantrums a little early. This is a picture I took when she was having one when I wouldn't let her play in the dog food. Oh the Joy!

Changes are upon Us...

Here we are in the beginning of September and there is so much going on right now, I can't even get my head around it.

We have moved! Yay! I am loving the new place, the open space, the newness of life is great! This last week has been a really hectic one with the move. We have had sick dogs (vet says it was stress from the move). Most importantly, there is a new little bundle of joy, Monroe who was born to Houston's sister on September 1st. She is so beautiful, and we are so excited for her arrival.

Also, I have not formally announced, but Houston and I are expecting another little one on Feb. 1, 2010. We are glad we are going to be settled into the new place in time for little peanut to arrive.

Emmory is getting so big, and unfortunately quickly approaching her terrible two's a little early. She is one little bundle of energy and is as sassy as ever.

I won't make this long, because I know that nobody likes to read long posts, with no pictures, but I am really looking forward to the fall season. The smell of the apple pies, and the leaves changing with the weather. Oh great times! Happy autumn to everyone, hope you enjoyed the summer and will enjoy the rest of this great year!

This last week, we took Emmory into the Eye Doctor, because we were worried about her vision. It turned out that she could not see! My baby has been walking around in a world of blur. After some tears (from me) we ventured out to the Optical Shop, and picked out some cute frames, praying that she will keep them on for longer than a minute. She is doing okay with them, but still wants to play with the frame.

We have been so busy, (and a little lazy too...)

I can't believe how long it has been since I have updated this blog. A lot has happened since April. Emmory had her first birthday, my sister Megan got married, my grandfather passed away, I quit my job, started babysitting a couple kids. I have been to Utah twice, Texas once, Estes Park, Idaho Springs and I think somewhere along the way, lost my mind! I can't believe that what I had heard my whole life about how quick time flies was true, but let me tell you it is!!! My baby is not a baby any longer. She is a toddler. She is so much fun and keeps us laughing all the time. Be prepared for a lot of pictures!!!
